#1 MOCHI ICE CREAM
We’re making mochi ice cream, its ice cream wrapped in mochi dough. Mochi is technically a japanese rice cake. So basically, we’re wrapping our choice of Laban ice cream with mochi dough. How delicious would the two of them be combined. This ice cream recipe yields a creamy, smooth and soft homemade mochi ice cream.
Ingredients you'll need:
1 cup (160g) sweet glutinous rice flour
1/4 cup (60g) granulated sugar
1 cup (236ml) water
Cornstarch for dusting
Labans Ice cream(s) of your choice
Instructions to follow:
First, you have to pre-scoop your Laban ice cream making sure it is as cold as possible and place the scoops in a plastic wrapped muffin tin which is then put back into the freezer for at least 2 hours or days prior. This helps make sure it is round and not melted during the wrapping of the ice cream.
Now, it's time we make our mochi dough. Mix in a bowl: your rice flour and granulated sugar. It may be a lot of sugar but it helps keep the dough soft. After it's completely combined, whisk in some water. When these ingredients are mixed cover the bowl with plastic wrap and microwave it for 1 minute.
After the 1 minute of streaming remove the plastic wrap, wet your spatula/whisk and fold the mixture repeatedly till it's evenly mixed and has no chunks. Then put it back into the microwave for 1 more minute.
Again, wet the spatula and fold the mixture repeatedly. DO NOT use your whisk from this point on. Repeat this step but this time for 30 seconds and fold as well.
Then place a sheet of parchment paper on your work space slightly larger than the size of a baking tray. Generously dust the parchment paper with cornstarch and then pour out your mochi dough at the center of your dusted parchment paper. Dust the top of the dough and your rolling pin with cornstarch; roll your dough well.
Roll your dough into the shape of a rectangle flattening the dough not so finely.
Repeatedly dust your dough with cornstarch so it doesn't become sticky.
Place the parchment onto a tray and put it in a fridge for 20 minutes until the dough is cold and set.
Once out of the fridge, dust the dough again. Use a big circular dough cutter to cut out as many circles as you can.
We’ve got our circular dough so it's time to remove our ice cream one at a time. We don't want melted ice cream at this stage.
Dust of the dough so that it won't taste like cornstarch and put a ball of ice cream in the middle and press the edges of the dough together to adhere. If it's too sticky the dust with cornstarch.
Wrap it with plastic and put it onto your muffin tray. Put it in a freezer for an hour or as long as you'd like. Before service leave it at room temperature for a minute.
